Top 5 treats you can taste at Winnipeg’s Frescolio

February 6, 2018
Our Member MeetUps are lively informal networking events – and our upcoming night at Corydon Avenue’s Frescolio fine oil and vinegar tasting bar promises to tantalize your taste buds.
We asked the Frescolio team to share their top 5 products to whet your appetite.

Traditional 18-year Aged Dark Balsamic: this is our oldest vinegar and you can really tell. It has a richness and depth of flavour that sets it apart from other balsamic vinegars. It is both sweet and sour, with no harsh acidic aftertaste. It has notes of prune and caramel with a creamy finish. We use it all the time as a marinade for red meats, and it’s my secret ingredient in chili and pasta sauces!

Mono-Varietal EVOO: like the Traditional Dark balsamic, a Mono-Varietal olive oil is unflavoured. The flavour profiles of these oils vary depending on the variety of olive. A Coratina olive is often robust in intensity with a green, bitter body and a peppery finish. An Arbosana olive will typically produce a mild to medium intensity oil, with a grassy, green body and a creamy finish. Mono-Varietal oils are particularly great in salad dressings or for dipping bread.
Harissa Infused EVOO: one of our exceptional spicy oils! Harissa is a North African condiment composed of cumin, caraway, coriander, garlic, saffron, chili peppers and olive oil. It has a rich, warm flavour with a medium intensity heat. The flavour from the cumin, coriander, and garlic will hit you immediately; the chili peppers will take a minute so don’t use too much! We love it drizzled over homemade couscous or pizza.

Sicilian Lemon White Balsamic: white balsamics are generally a bit more tart and acidic than dark balsamics. Our Sicilian Lemon has a true lemon flavour without being too bitter or sour. Its bright and sweet characteristics make it ideal for salad dressings or as an addition to sparkling water. As one of our most versatile vinegars, you can pair it with just about any infused or varietal evoo.

Sesame Oil: this is our most popular specialty oil. The sesame seeds are lightly roasted before the oil extraction process imparting a pungent, nutty aroma and flavour. Unlike other sesame oils, our does not have a burnt aftertaste; it is extremely smooth with a very light finish. We love to use it in Asian inspired stir-fry’s, over rice, or in meat marinades.
